Green juice recipes are considered the healthiest of juicer recipes. Green vegetables are an exceptionally abundant source of many vitamins, minerals and phytonutrients. In particular green vegetables are high in vitamin C, lutein, zeaxanthin, chlorophyll and carotenoids.
Health Benefits of Chlorophyll
Chlorophyll is the plant pigment that puts the ‘green’ hue in green vegetables. So if your eating green, you can be sure there is chlorophyll in your diet. The darker green is the vegetable, the more chlorophyll it contains. This makes dark green leafy vegetables, like kale and spinach, excellent sources of chlorophyll.
One of the many health benefits of chlorophyll is its amazing ability to build red blood cells. Its chemical structure is 99% identical to an important constituent of red blood cells called hemin. When we ingest a source of chlorophyll, such as drinking green juice recipes, our digestive system changes the chemical structure of chlorophyll so it becomes 100% hemin.
Chlorophyll is also a powerful chelator. It binds with poisonous heavy metals so they can be excreted out of the body. Chlorophyll is particularly effective at removing mercury.
Chlorophyll is an alkaline forming substance and contributes to the overall alkalinity of green juice recipes. Consuming more alkaline based foods can have a myriad of health benefits. When we become less acidic, we are much less likely to develop ‘acidic’ diseases. Cancer for example finds it very hard to exist in a very low acidic or neutral environment. Heartburn and joint pain have also been associated with over acidity.
Lutein and Zeaxanthin
Lutein and zeaxanthin are two carotenoids that help keep our eyes healthy. They are found in their greatest concentration in the retina (lens) of our eyes were they act as antioxidants protecting the retina from cell damage by free radicals. So a diet rich in lutein an zeaxanthin rich foods such as dark leafy greens can significantly reduce our risk of developing potentially blinding eye diseases like glaucoma, macular degeneration and cataracts.
